Originally it was from prized Kashmiri chilli, but the dhabas use a red food colouring. The colouring is usually organic as well actually, only truly grim places use artificial red. But if your chicken comes in a bright red yoghurt sauce that's exactly what it will be.
Mine is more yellow from tumeric and has real Kashmiri chilli powder.

It's just grilled, when chicken is cooked in a tandoor it's just a powerful oven grill.
In a restaurant you'd get it like this but they would then smoke it in ghee, which would stink out the flat.
