In the Old Testament (specifically in Exodus and Leviticus), the fat-tailed sheep was the standard animal used in sacrificial rituals. Mystically, the most prized part of the offering—the entire heavy tail and the visceral fat (chelev)—was wholly removed and burned on the altar as a "fragrant aroma" to God.
