Maybe there are infinite possible theories, but it doesn't mean that all theories are good, there are pretty crappy theories out there.
Well, from time to time, people find out that some theories/ideologies are better than others, but the change between theories (specially core ideas) is not that easy, it requires some effort/time and some people just stay on the known theory over a new one (that it is potentially (slightly) better).
We try to upgrade our ideas/theories if we find out a better one! We are not stuck in the past, like old religions are.
