I've used the one(s) that allow multiple OSes just so I could steal from the vending machines and such. Also one that let's you add your own radio station(basically just adding your own music).

Been interested in doing some of the gameplay ones like the Dark Future one, but usually I'm a simple guy that's fine with the defaults. I've never modded the gameplay of New Vegas.
