It seems to depend how they react when you switch in those gold or red star moments. Defensive assists seem to block the attack and I think do damage. Then you got dodge/evasive, don't remember what word the game uses, that seem to slow down time for a bit. I notice the latter with Zhu, where character like Caesar and Nicole, who both have defensive, block the attacks.
