Well, another one that interests me is that George Lucas told someone on the set of Revenge of the Sith that the entire story is what's relayed by R2-D2 to the Whills when they write the Journal of the Whills, so in theory scenes that R2-D2 doesn't directly witness are only canon insofar as R2-D2 or the Whills could reconstruct them after the fact.
