It's the same reason people will pay $30 for a small pizza. Comfort foods are luxury. There are people who pay $40 to DoorDash McDonald's instead of just getting a Steak. They want their burgers.
The cost isn't about the cost of ingredients, or inflation, its about progressively greedy society charging what they know they can get away with.
When you're an egg sandwich guy, you identify as an egg sandwich guy, and you'll pay for your egg sandwich to keep your identity intact instead of code switching to a steak man or a salad bro.
That's how we get $25 egg sandwiches.
