Stinging nettle is low in carbs and no fat, and relatively high in proteins (but not whole protein), and dietary fibers. Not sure about vitamins and minerals. It can be considered as a leafy green vegetable. And can be cooked as such.
I heard about buckwheat being superfood. And others which I can't list from the top of my head for I rarely pay any mind to this, superfood is kindofa buzzword.
