I know it was for the demonstration, but I check the sharpness by placing the blade lightly on the nail of my thumb. I hold my thumb in an angle a bit allowing the blade to slide. If it bites and doesn't slide, then it is sharp. I do it really lightly so it won't cut into the nail just stops.
How did you fix the blade in? My plan is to drill a hole into the handle slide the blade in then fix it with wedges on both sides.

You are doing better than me. I made a knife once with an interesting technique. I might make a photo and explain sometimes.
